It’s that time of the month again, Flavor of the Month time. If you keep up with my food account on Instagram then you know we were chatting about starting a monthly series since I’ve been on a bit of an ice cream recipe development kick as it is. If you don’t, go give me a follow-what are you waiting for? I’ll wait for you to do that before going on.

So without further ado, and because I’m sure you’ve already gathered from the title, this month’s oh-so-fitting flavor is Chocolate Covered Strawberry Ice Cream. I don’t want to toot my own horn but I was told it ” literally tastes like Valentine’s Day!” and that’s exactly what I was going for. Go me!

Besides the fact that this tastes just like Valentine’s Day this ice cream is also extremely easy to make. I use Half & Half and Heavy Whipping Cream in this recipe instead of my usual base of Coconut Milk and coffee so the whole chilling process is cut completely out, making this a great last minute treat.

One thing that is really important when making this recipe is to use quality ingredients. I know, I know, that’s always important but for this recipe specifically you’re really going to want red, juicy, slightly sweet strawberries and a rich chocolate.

Making the base of this ice cream is so incredibly easy. You’ll start with a cup of chopped strawberries in a mixing bowl. Then after mixing it with lemon juice, coconut sugar, and sugar let it sit for about 15-20 minutes to soften and release the strawberry juice.

Once the mixture has softened a bit you will then break down the strawberries further, either by hand using a fork or potato masher or with a blender on pulse. Once broken down into a chunky sauce set inside refrigerator to be chilled while you complete the next step.

Take your leftover chopped strawberries and lay them out on parchment paper then drizzle with melted chocolate coating.

Let the chocolate harden on strawberries as you start the ice cream base.

Chocolate Covered Strawberry Ice Cream

Valentine's Day in your mouth.

Ingredients

  • 1.5 cups Strawberries chopped, split
  • ¼ cup Coconut Sugar
  • ¼ cup Sugar
  • 1 tbsp Lemon Juice
  • 1 cup Heavy Whipping Cream
  • 1 cup Half & Half
  • 1 bar coating chocolate
  • 1 bar favorite chocolate, I used Lindt chopped

Instructions

  1. In a mixing bowl combine 1 cup of chopped strawberries with lemon juice, coconut sugar and sugar then mix and set aside for 10-15 minutes while strawberries release their juices.

  2. During that time melt coating chocolate in small saucepan.

  3. Arrange remaining strawberries on parchment paper then drizzle with melted chocolate. Let cool and harden.

  4. Once strawberry mixture has softened, about 15 minutes, blend the mixture to create more of a paste consistency. I used my blender, pulsing just a handful of times to crush the strawberry chunks without fully removing all of them.

  5. Add heavy whipping cream and half and half to strawberry mixture then stir well and pour into your ice cream maker.

  6. Pull out your chocolate bar and chop about ¼ to ½ cup of chocolate, your preference.

  7. Once the ice cream has thickened a little, about 10 minutes into blending, start adding chopped chocolate shards and about ¼ of your chocolate covered strawberries.

  8. When ice cream reaches your desired thickness remove from machine and store layered with remaining chocolate covered strawberries or serve with whipped cream.

Mix equal parts cream and half & half with blended strawberry mixture, then put into your prepared ice cream machine. Once my batch began to blend I dropped a couple drops of red food coloring for added color as well as a half cup of chopped Lindt chocolate and a handful of the chocolate covered strawberries.

Once the ice cream is your desired consistency scoop it into a cup or bowl that’s been lined with with your chocolate covered strawberries and then top with whipped cream and more chopped chocolate covered strawberries. Chocolate Covered Strawberry Ice Cream, Bon Appetit!
